Giuseppe Collesi y Roberto Bini, responsables del proyecto, tienen como referente en su trabajo la solidez de la tradición belga y sus parámetros de calidad.La Fabbricca della Birra Tenute Collesi, en Apecchio, una preciosa villa medieval de la Marche, región fronteriza entre la Toscana, Umbria y Romagnase, se encuentra a 700m sobre el nivel del mar. Esta situación privilegiada permite elaborar la cerveza Collesi con las límpidas aguas calcáreas del Monte Nerone, cuyas características la hacen de las mejores aguas de Europa para la producción de cerveza.El cereal empleado es, también, de primera calidad. Se cultiva en la hacienda familiar y se maltea en unas modernas instalaciones co-propiedad de los Collesi. Giuseppe Collesi y Roberto Bini cuentan con la experiencia y conocimientos del reputadísimo Maestro Cervecero belga Mark Knops, reponsable de otras 8 cerveceras, entre ellas, la trapense Achel. Mark Knops supervisa todo el proceso, desde el malteado del cereal hasta el embotellado.
