Inoltre, la produzione, la scelta dei processi produttivi e l’orientamento commerciale dipendono dalla comunità monastica e lo scopo economico della produzione di birra deve essere diretto al sostentamento dei monaci e alla beneficenza e non al profitto finanziario.
La birra Chimay Blu, battezzata “Grande Réserve”, è una birra trappista scura con un aroma marcato e dal sapore complesso che si affina nel tempo. Prodotta inizialmente come birra natalizia, denota un aroma caramellato gradevole ed un gusto leggermente floreale donato dal lievito fresco, con sentori di noci, mandorle, spezie e ribes.
Da abbinare a formaggi dal sapore deciso e ai salumi in genere.
