The sensory profile is headlined by a powerful, complex aroma where rich, caramelized malt meets a distinctive rosy, flowery perfume derived from the house Trappist yeast. This floral elegance is layered over deep fruit notes of raisins, plums, and dried figs. On the palate, a bready-toasty malt foundation gives way to a surprisingly dry finish, accented by light peppery phenols and a gentle, warming alcohol presence. Appearance. Deep coppery-brown to dark mahogany (18-22 SRM). Massive, dense, and moussy head with excellent persistence and lacing, colored a rich cream to light tan. Generally clear, though it may show a slight haze if the yeast sediment is disturbed.
Aroma. High intensity with a complex blend of dark caramel and toasted bread maltiness. Prominent esters of dark fruit including raisins, plums, and dates are complemented by a unique rosy, floral perfume.
