Cascade Brewing’s Encyclopedia Botanica presents as a sophisticated Straight Sour Beer, built upon a barrel-aged blond ale base. A sharp, lemony lactic sourness dominates the sensory profile, which is intricately layered with the floral elegance of elderflowers and the resinous, gin-like punch of juniper berries. Bright bursts of orange peel provide a zesty citrus counterpoint to the subtle, crackery malt backbone. At 8.5% ABV, the beer exhibits more structural depth and weight than typical light sours, finishing bone-dry with a lingering botanical complexity. The barrel aging process subtly rounds the edges of the assertive acidity while highlighting the spice components.
Appearance. Pale straw to light gold (3–5 SRM). Clarity is generally clear but may exhibit a slight haze from botanical oils. Pours with a white head that shows poor retention; highly effervescent.
Aroma. High intensity with dominant sharp lactic acidity and lemon zest. Pronounced floral elderflower and piney juniper notes are at the forefront, followed by aromatic orange peel. Low crackery malt character; no hop aroma.
Taste. Intense, clean lactic sourness with a sharp lemony edge. Flavors of tart apple and citrus zest from the orange peel are prominent. The mid-palate reveals gin-like juniper and floral elderflower. Finishes very dry and crisp with undetectable hop bitterness and a clean fermentation profile.
Mouthfeel. Medium-light body with high carbonation. Noticeable but well-integrated alcohol warmth given the higher ABV. Sharp, refreshing acidity provides a crisp, puckering sensation without astringency.
