A sharp, lemony lactic sourness dominates the sensory profile, which is intricately layered with the floral elegance of elderflowers and the resinous, gin-like punch of juniper berries. Bright bursts of orange peel provide a zesty citrus counterpoint to the subtle, crackery malt backbone. At 8.5% ABV, the beer exhibits more structural depth and weight than typical light sours, finishing bone-dry with a lingering botanical complexity. The barrel aging process subtly rounds the edges of the assertive acidity while highlighting the spice components.
