This Wild Specialty Beer is a masterclass in fermentation complexity, showcasing a vibrant collision of succulent fruit and rustic funk. The Cher Ami house culture and Brettanomyces provide a foundation of earthy, leather-like complexity that intertwines seamlessly with swathes of rich, juicy raspberry. Aging in ex-Sangiovese red wine barrels imparts a sophisticated vinous wood character, reminiscent of a dry Beaujolais, while contributing a subtle tannic structure. The result is a sensory profile defined by sharp acidity and a bone-dry finish, where the bright fruit character is elegantly balanced by a lingering, woody depth and sophisticated wild yeast nuances.

Appearance. Radiant deep ruby to vibrant raspberry pink; forms a fine-textured, pink-tinted head with moderate to low retention. Hazy to nearly opaque due to the heavy fruit addition and active wild cultures.

Aroma. High intensity aromatics of fresh, jammy raspberries lead into a complex web of wild fermentation notes. Distinctive Brettanomyces funk presents as aged leather and dry hay. The Sangiovese barrels add a vinous, red grape skin quality alongside light toasted oak and a sharp, clean lactic acidity.

Taste. The initial impression is a burst of tart, unsweetened raspberry juice followed by a firm, refreshing acidity. Low to no hop bitterness allows the fruit's natural tang and wood tannins to provide structure. Fermentation character is dominant, featuring rustic, earthy funk and a dry, vinous finish echoing red wine. The aftertaste is long and fruit-forward with a crisp, cleansing tartness.

Mouthfeel. Light to medium-light body with a brisk, prickly high carbonation. A noticeable but pleasant tannic astringency from the raspberries and red wine barrels enhances the perceived dryness. Alcohol warmth is negligible, keeping the focus on the crisp, acidic structure.
