Ispirata ai liquori amari europei e alla cultura del gruit (la miscela di erbe officinali e spezie utilizzata nel Medioevo prima che si affermasse l’uso esclusivo del luppolo per fini aromatici e conservativi), la Gentiana è una birra dall’inusuale carattere botanico, che mette in campo un magistrale e avvincente gioco di alternanze tra amarezza e acidità.
La radice di genziana conferisce alla birra il suo carattere distintivo, secco e balsamico, arricchito dall’aggiunta di panace, verbena odorosa e mirto palustre. Fermentata sulle fecce di sidro in botte per nove mesi, regala una bevuta rustica, terrosa ed erboristica, dal carattere funky (simile a un Lambic belga, con tutte le sfumature selvagge e di cantina) e un esordio al sorso fruttato e aspro, prima di virare significativamente verso una suggestione da liquore officinale – nonostante il moderato tenore alcolico.
