Fondée en Bourgogne au printemps 2015 par Amélia et Guillaume, la Brasserie Elixkir est née d’une volonté simple : proposer aux Dijonnais des bières de caractère à l’image de l’illustre chanoine qui inspira son nom : Authentiques dans les valeurs. Irrévérencieuses dans la bouteille.
A l’origine de ce projet, l’inévitable rencontre de deux dijonnais habitués à soigner l’austérité ambiante avec les plaisirs simples de la table. Ils sont alors étudiants en Master en procédés fermentaires, à Dijon, à l’intitulé qui en dit long sur leurs intérêts : Vins, bières, fromages. Cette formation les conduira à travailler dans des brasseries belges traditionnelles, notamment la Brasserie Saint-Feuillien au Roeulx et la Brasserie à Vapeur à Pipaix - dernière du genre en état de marche – mais aussi dans des brasseries incarnant le renouveau brassicole comme Nøgne ø situé à Grimstad (Norvège) et des petites brasseries françaises comme la Morgat à Belle Île en Mer .
A l’issu de leur formation, ils se lancent bien déterminés à mener à terme leur projet, soutenus par leurs familles et leurs amis. Un peu plus de 6 mois après avoir été diplômés et à seulement 23 ans leur rêve devient réalité : la Brasserie Elixkir voit le jour à Couternon.
Moins de trois ans après, en Mai 2018, la brasserie déménage dans de nouveaux locaux au 7 rue de l’Enclume à Quetigny. Légèrement en retrait dans l’une des zones commerciales les plus actives du Grand Dijon, la brasserie s’épanouie dans un bâtiment trois fois plus grand, avec un aménagement pensé pour apporter toujours plus de soins aux bières. Dans la foulée la Brasserie ouvre en juin 2018 une Taproom, couplant l’offre de bouteilles à emporter de la boutique avec un espace cosy où il est possible de déguster les bières dans les meilleures conditions possibles et à des tarifs sympathiques.
Depuis 2020 l’équipe s’est renforcée en accueillant Quentin puis quelques mois plus tard Baptiste pour s’occuper ensemble de la partie production.
Au troisième trimestre 2022, la brasserie a bénéficié d’une subvention européenne FEDER pour agrandir sa salle de fermentation et changer son embouteilleuse afin d’améliorer encore et toujours la qualité de nos bières.
