This Double IPA showcases a bold sensory profile defined by its unique use of spelt. The aroma leads with intense tropical and resinous hop notes, typical of a modern Double IPA, supported by a distinctively nutty and grainy malt backbone from the spelt. On the palate, a soft, creamy texture balances the firm hop bitterness, offering flavors of ripe stone fruit and citrus zest. The 8% ABV provides a well-integrated warmth that complements the dry, clean finish. This version of the style trades some traditional crispness for a more rustic, pillowy mouthfeel and enhanced complexity.
Appearance. Deep gold to light orange (8-10 SRM). Pours with a thick, persistent off-white head with excellent lacing. Slight haze is present, likely enhanced by the high protein content of the spelt.
Aroma. High intensity hop aroma featuring notes of grapefruit, mango, and pine resin. The malt profile is more expressive than a standard version, offering a grainy, slightly nutty, and rustic aroma derived from the spelt. Fermentation is clean with very low fruity esters.
Taste. Initial hop-forward impression of citrus peel and tropical fruit. The spelt adds a soft, nutty malt character that provides more depth than neutral base malt. Bitterness is high and firm but remains smooth without harshness. The finish is dry to medium-dry, leaving a lingering resinous aftertaste.
Mouthfeel. Medium body with a noticeably smooth, almost creamy texture due to the spelt. Carbonation is medium-high. A gentle, pleasant alcohol warmth is present but well-integrated, with no astringency.
