Es el resultado de una mezcla única de Lambic que envejeció en barricas de roble y luego experimentó una segunda fermentación en la botella. La Oude Geuze Boon se lleva elaborando de manera tradicional, sin azúcar y sin filtrar desde 1975. Es especialmente apreciada por su sabor suave y su ligera acidez. ¿Su secreto? Todo comienza con la cerveza Lambic, que se elabora con un 60% de malta de cebada y un 40% de trigo, y luego madura al 100% en barricas de roble. La clave del proceso es que se mezclan Lambics que han madurado durante 1, 2 y 3 años y, después de embotellar, se somete a varios meses adicionales de acondicionamiento en botella. Esta fermentación secundaria crea sabores extra complejos con una efervescencia que produce una agradable espuma al servirla.

La Boon Oude Geuze rappresenta uno dei migliori esempi di birra in stile Lambic dalla fermentazione 100% spontanea. Questa birra subisce un affinamento in botti di rovere che va da 1 fino a 3 anni.

Al naso emergono sentori di formaggio, vino e sottobosco. Al palato è acidula e fruttata, con note vinose e agrumate (pompelmo, bergamotto). Termina in un finale secco e seducente.

Ideale come aperitivo, ma in accompagnamento a salmone affumicato, filetto al pepe verde con aceto balsamico o formaggi cremosi.

It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date! Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. Maak kennis met de originele Oude Geuze Boon, zoals we hem al sinds 1975 maken: heerlijk mals maar ook fris, fruitig en complex, met een intense afdronk. Het resultaat van een unieke assemblage van op eiken vaten gerijpte lambiek en een rustige hergisting op fles.

Oude Geuze Boon is ongetwijfeld een van de bekendste bieren van onze brouwerij. Deze traditionele, ongezoete en ongefilterde Oude Geuze maken we al sinds 1975. Het recept dateert uit de 19e eeuw en werd doorgegeven aan onze stichter Frank Boon door René de Vits, de geuzesteker die zijn ambacht aan Frank doorgaf.

Oude Geuze Boon is bijzonder geliefd om zijn malse smaak met zachte zuren. Zijn geheim? Alles begint bij lambiekbier – een bier van spontane gisting - dat wordt gebrouwen uit 60% mout en 40% tarwe en overjaarse hop. In ons koelschip wordt het blootgesteld aan de wilde gisten uit de omgevingslucht en vervolgens rijpt het voor 100% op eiken vaten.

Om tot de Oude Geuze Boon te komen, maken we een assemblage van lambiek die op 1, 2 en 3 jaar heeft gerijpt. Die wordt gebotteld en krijgt daarna maandenlang de tijd om op fles te hergisten en te rijpen. Zo ontstaan extra complexe smaken, met een rijke sprankeling die bij het uitschenken een mooie schuimkraag mogelijk maakt. Het is ook dankzij de hergisting op fles dat de lambiek-assemblage een ‘Oude Geuze’ wordt.

Vintage

De jaartallen op het halsetiket verwijzen naar het brouwseizoen (vintage) waarin de lambiek gebrouwen werd die het meest aanwezig is in de assemblage van een fles Oude Geuze Boon. Dat brouwseizoen vindt plaats wanneer het kouder wordt, tussen oktober en april, en beslaat dus 2 verschillende jaren.

Smaak

Oude Geuze Boon smaakt lekker mals, dankzij zijn typisch zachte en ronde textuur. Je ontdekt een zeer frisse, meer fruitige dan kruidige neus, en toetsen van citrus (meer bepaald pompelmoes), abrikoos en eik. Verder geniet je volop van zijn complexe, evenwichtige karakter met toetsen van hout, vanille en nootjes. De afdronk is lang, droog en intens.

“Oude Geuze” is een door de E.U. beschermde benaming, die de authenticiteit van dit bier garandeert. Je herkent dit ook aan het geel-blauwe logo op het etiket van de fles.

Avant embouteillage, la gueuze est portée à température de fermentation pour subir une seconde fermentation. To make a geuze beer, you do not just ¡Èbrew¡É a beer. The process is very complex and takes many years. It starts by brewing lambic beer, which is a spontaneously fermented beer that is aged in oak casks called ¡Èfoeders¡É. By aging the lambic beer in these casks for up to 3 years, each foeder gives its own character to the beer. It becomes mildly sour with a rich palette of aroma¡Çs. For Boon Geuze, lambic beer that has aged for 18 months (90%) – which is called ¡Èyoung lambic¡É - is blended with 5% of 3 years old lambic and another 5% of very young lambic to ensure a continuing fermentation in the bottle. After another 6 months of fermentation in the bottle, the beer is ready to leave the brewery.

Boon Geuze (Oude Geuze Boon on the label) is one of the finest examples of this traditional 100% spontaneous fermentation lambic style. It has the acidity of a good sparkling wine and a little bit of smokiness like whisky. This smoky charachter comes from the special wild yeasts that are used to ferment this beer, and from aging a long time in oak casks. Grapefruit-like fruitiness and touches of oak combined with the acidity make Boon Geuze a very refreshing beer.
