Brauerei Aying’s seasonal Weizenbock is a masterclass in balance, pouring a luminous golden-copper with a signature unfiltered haze. Utilizing a traditional wort separation method and a blend of four malts, it delivers a profound bready, grainy wheat richness that anchors the sensory experience. The aromatic profile is quintessential Ayinger, bursting with high-intensity notes of ripe banana and spicy clove. On the palate, the 7.1% alcohol is elegantly integrated, providing a gentle warmth that complements the creamy, moussy texture. Despite its malt depth, it concludes with a surprisingly dry and clean finish, punctuated by remarkably low bitterness and no hop flavor.
Appearance. Golden with copper tones (SRM 8–12); unfiltered haze with a persistent, thick, moussy off-white head and excellent lacing.
Aroma. High intensity; rich bready and grainy wheat maltiness; prominent yeast-derived banana esters and spicy clove phenols; no hop aroma; clean, subtle alcohol presence.
Taste. Deeply malty with flavors of fresh bread and toasted wheat; low bitterness provides a slightly sweet initial impression that transitions into a characteristically dry finish; classic banana and clove spice flavors; no hop flavor; complex and well-attenuated.
Mouthfeel. Medium-full body with a soft, fluffy, and creamy texture; moderate to high carbonation; noticeable but smooth alcohol warmth; no astringency.
