Alvinne Phi is a sophisticated Straight Sour Beer that showcases the brewery’s signature Morpheus yeast strain, delivering a complex interplay of lactic acidity and stone fruit esters. Despite its formidable 10% ABV, the sensory experience is remarkably balanced between a residual honeyed sweetness and a sharp, lemony tartness. The pale blonde profile radiates with aromas of tart apricot, green apple, and a soft, bready malt presence. On the palate, the assertive acidity is tempered by a medium-full body, atypical for the style, which carries notes of white peach and a crisp, vinous finish that lingers with a gentle alcoholic warmth.

Appearance. Deep straw to light gold (4-6 SRM). Exhibits a slight haze with a fine-textured, bright white head that settles into a persistent ring, leaving light lacing. Effervescent carbonation is visible.

Aroma. High intensity lactic sourness leads the profile, reminiscent of fresh lemon juice and tart apple. Underlying this is a rich, fruity ester profile of apricot and peach driven by the Morpheus yeast. Malt is low but present as a clean, biscuity or crackery scent. No hop aroma is detectable.

Taste. Initial impression is a sharp, clean lactic bite that immediately transitions into flavors of tart stone fruits and citrus. A substantial bready malt backbone provides a platform for the high acidity, creating a unique sweet-and-sour harmony. Hop bitterness is undetectable, allowing the fermentation character to dominate. The finish is off-dry and crisp, with a lingering vinous quality and a touch of fruit skin tartness.

Mouthfeel. Medium-full body with a surprisingly round texture for a sour ale. Carbonation is moderate-high, providing a prickly, refreshing sensation. A noticeable but well-integrated alcohol warmth reflects its high gravity, accompanied by a sharp, mouth-watering acidity.
