Schwarzbier has been around since at least the 16th century and was once more widespread than it is today. During the Industrial Revolution in the 19th century it was almost replaced by mass-produced lighter beers. Only a few breweries have preserved the beer style, and it has been experiencing a renaissance for around 30 years.
We use a very special smoked malt for our Aecht Schlenkerla Erle black beer. This is not dried over a beech wood fire as usual, but over an alder wood fire. The alder smoked malt brings a fine, complex smoky flavour to the beer, which is less strong and spicy than our classic smoked beer. A high proportion of roasted malt ensures a pronounced roasted aroma and the dark, almost black colour. At 4.2%, Aecht Schlenkerla Erle has slightly less alcohol, but has a strong taste.

A high roasted malt content provides a pronounced roasted aroma and the dark, almost black color. At 4.2% abv, Aecht Schlenkerla Erle has slightly less alcohol, but is strong in flavor.

Причина — сложность производственных процессов. Промышленная революции XIX века практически уничтожила этот стиль, вытеснив более легким пивом массового производства. Только отдельные пивоварни, остававшиеся верными традициям, сохранили Шварцбир в ассортименте. Благодаря им черное пиво переживает свой Ренессанс вот уже на протяжении 30 лет. Для создания своего черного пива "Erle" пивоварня Aecht Schlenkerla использует исключительный солод особого копчения. Для обычного копченого пива традиционно используют буковые дрова, а для сушки солода для "Эрле" — ольховые. Солод ольхового копчения наделяет лагер утонченным и сложным вкусом с дымными тонами, при этом вкус обладает большей мягкостью и более нежной, чем у классического копченого пива, пряностью. Значительная доля жареного солода также гарантирует более выраженный букет и знаменитый черный цвет Шварцбира.
Немного истории о самом известном сорте пивоварни Шленкерла, сорт Мерцен, его варили в Баварии уже в XVI веке. Сохранилось постановление о баварском пивоварении от 1539 года, в котором говорится, что пиво Мерцен можно варить только между 29 сентября и 23 апреля. Сваренное пиво часто хранили в подвалах для подачи на фестивале Октоберфест. Для того чтобы пиво могло храниться так долго, были увеличены доля алкоголя и плотность пива. Немецкий "Мерцен" характеризуется средним и полным вкусом, солодовым ароматом, чистым сухим послевкусием, а цвет пива колеблется от бледно-янтарного до темно-коричневого.
Первые упоминания о пивоварне Schlenkerla , которая расположена в центре старинного города Бамберг, относятся к 1405 году. Пивоварня принадлежит семье Трум, сегодня ей управляет представитель шестого поколения. Пивоварня специализируется на копченом пиве, которое разливается прямо из дубовых бочек в подвалах пивоварни. Пиво под маркой "Эхт Шленкерла" варится в соответствии с законом о чистоте пивоварения от 1516 года. У пивоварни есть свои секреты и особенности приготовления копченого пива. Одна из них заключается в обработке солода: зелёный солод помещают на мелкую проволочную сетку и сушат при помощи тепла от огня внизу. Дым, возникающий в процессе горения, обволакивает сетку и "окуривает" солод, который в итоге становится копченым. Еще одной особенностью является использование при копчении поленьев из бука высшего качества, который растет во франконском местечке Юра. Перед употреблением древесину обязательно выдерживают как минимум три года. Она придает копченому пиву "Эхт Шленкерла" специфический аромат и тёмный цвет.
