Abbaye de Saint Bon-Chien is a sophisticated Straight Sour Beer, defined by its complex mixed fermentation and a year-long maturation in Merlot oak barrels. This 11% ABV vintage ale presents an intricate sensory profile where sharp, clean lactic acidity meets the deep, vinous character of red wine. Expect a sophisticated interplay of tart apple and lemon esters alongside rich notes of toasted oak and dark fruit derived from the Merlot casks. The wine yeast fermentation ensures a dry, refined finish, while the significant alcohol presence provides a comforting warmth, elevating the bready malt backbone into a world-class, multi-layered sour experience.

Appearance. Deep amber to reddish-copper (SRM 14–18) from the wine barrel aging; clarity is clear to slightly hazy; thin off-white head with moderate retention that fades to a fine ring.

Aroma. High intensity sharply sour character; prominent vinous Merlot notes and oak vanillin; fruity esters of tart cherry, green apple, and lemon; subtle biscuity malt background with no hop aroma.

Taste. Clean, powerful lactic sourness dominates the initial impression; flavor features complementary bready and crackery malt notes alongside red wine tannins and grape fruitiness; hop bitterness is undetectable; finishes very dry and acidic with a lingering, complex vinous aftertaste.

Mouthfeel. Medium body with high carbonation providing a prickly, effervescent sensation; noticeable and integrated alcohol warmth; crisp acidity with a very slight oak-driven astringency.
