Abbaye de Saint Bon-Chien is a sophisticated Straight Sour Beer, defined by its complex mixed fermentation and a year-long maturation in Merlot oak barrels. This 11% ABV vintage ale presents an intricate sensory profile where sharp, clean lactic acidity meets the deep, vinous character of red wine. Expect a sophisticated interplay of tart apple and lemon esters alongside rich notes of toasted oak and dark fruit derived from the Merlot casks. La Abbaye de Saint Bon-Chien è la birra di punta di BFM, giudicata nel 2009 "Miglior birra al mondo invecchiata in botti di rovere" da Eric Asimov, critico enogastronomico del New York Times.

Il suo nome è ispirato ad un gatto, l'amattissimo "Buon cane" (Bon Chien), ospite fisso del birrificio fino alla sua morte nel 2002.

Viene prodotta attraverso un complesso blend di birre maturate in botti diverse.

Birra di color bruno rossastro, con schiuma piuttosto effimera, è molto complessa e caratterizzata da note di frutta rossa matura, datteri, fichi secchi, ciliegie sotto spirito e sentori legnosi. In bocca è piena e acidula, richiamando le note olfattive con aggiunta di caramello e sentori vinosi.
