This Wild Specialty Beer presents as an elegant marriage between a Golden Ale and the delicate, floral essence of Chasselas grapes. The profile is defined by a vibrant interplay of white wine-like vinous notes, lemon zest, and a subtle flinty minerality characteristic of the grape variety. Oak barrel aging contributes a structured wood profile and soft vanillins that round out the bright, lactic acidity. Complex layers of Brettanomyces offer farmyard funk and dried hay, while the underlying base malt provides a faint honeyed cracker foundation. It finishes bone-dry with a lingering grape skin tannin and a refreshing, crisp effervescence that cleanses the palate.

Appearance. SRM 4-6; deep gold to straw yellow. Pours with a moderate white head that dissipates relatively quickly due to acidity, leaving light lacing. Clarity is slightly hazy with a brilliant glow when held to the light.

Aroma. High aromatic intensity featuring prominent floral white grape notes and green apple. A distinct wild character presents as horse blanket and earthy funk. Subtle toasted oak and vanilla scents emerge as it warms, supported by a low, cracker-like malt sweetness and a sharp lactic tang.

Taste. Leading with a sharp, clean lactic acidity and flavors of fresh Chasselas grapes, white currants, and lemon peel. The fermentation character is complex, showing aged hops and barnyard funk. Hop bitterness is very low, as the balance is driven by acidity. The finish is bone-dry and vinous, with a lingering mineral and oak-tannin aftertaste.

Mouthfeel. Medium-light body with a thinning effect from the wild fermentation. Carbonation is high and prickly, enhancing the perceived dryness. A light alcohol warmth is present but well-integrated. Slight tannin-induced astringency provides structure without being harsh.

Mot de Julien Bretheau d' À Tue-Tête! : "Ma bière préférée depuis la création de la brasserie, cette bière est le parfait trait d’union entre les mondes de la bière craft et du vin nature. Funky à souhait, elle reflète à merveille mon amour du terroir romand. Comme l'an dernier, j'ai eu la chance de pouvoir travailler avec du raisin chasselas du Domaine Piccard, cultivé en biodynamie. Le raisin a macéré pendant 4 mois en grappes entières dans notre bière de base affinée en barriques Surette. La fermentation semi-carbonique a apporté des arômes sauvages et fait ressortir l'aromatique du chasselas. Un joli jus, plutôt sur une bière funky que vraiment "acide". Mioum!"
