Nino Bacelle e Guido Devos hanno dedicato al piccolo villaggio rurale che ospita il loro birrificio la Noir de Dottignies, una robusta e intensa Belgian Strong Dark Ale realizzata con sei differenti qualità di malti (che gli conferiscono il tipico color mogano scuro, quasi tendente al nero) e luppoli in fiore inglesi e tedeschi di varietà Challenger e Saaz – ideale contrappunto amaro a una bevuta dall’esordio piuttosto dolce.
Note aromatiche pulite e definite di frutta disidratata (prugna, uvetta) e secca (mandorla, nocciola) sono punteggiate da gentili richiami speziati (noce moscata, vaniglia), mentre un sottofondo biscottato dalle eleganti tostature anticipa le medesime sensazioni al sorso, introdotto da un’effervescenza vivace e mosso da un’invidiabile scorrevolezza – nonostante l’importante tenore alcolico, dalle sfumature liquorose del rum.
Un tessuto strutturato di richiami – molto originale per una birra belga! – a cioccolato, caffè e caramello abbrustolito completa il profilo gustativo, conducendo a un finale tagliente, perfettamente secco e snello.
Un’interpretazione moderna dell’antico stile monastico, consigliatissima a ogni appassionato e abbordabilissima per ogni neofita e curioso!
