A Trappist ale can only be called Trappist ale when it has been brewed between the four walls of a Trappist monastery, under the supervision of the monastery’s monks, and when part of the proceeds is earmarked for charity. Pure and honest. And that’s reflected in the taste.

A “Trappist” has to satisfy a number of strict criteria proper to this logo before it may bear this name:

The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision.
The brewery must be of secondary importance within the monastery and it should witness to the business practices proper to a monastic way of life
The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need.

La Chimay Premiere, nota anche come Chimay tappo rosso, o più semplicemente Chimay rossa, è una birra trappista in stile belgian dubbel. Dal colore rosso mogano e con una schiuma beige cremosa e compatta, la Chimay tappo rosso ha una notevole carbonazione e un corpo medio. Al naso esprime il meglio di se, donando sentori intensi di frutta rossa, frutti di bosco, miele, pepe, cannella, lievito e caramello. In bocca note fruttate, maltate e leggermente luppolate rendono la Chimay Premiere una birra molto piacevole. E’ una birra equilibrata e semplice da degustare, nonostante i notevoli sentori presenti.

La belgian dubbel è una birra robusta ma non eccessivamente alcolica, nella quale convivono note maltate, fruttate e speziate, in un grande equilibrio.

Chimay è un birrificio trappista con sede nell’omonima località della Vallonia, dove sorge l’Abbazia di Notre-Dame de Scourmont, edificata nel 1850 da alcuni monaci dell’Abbazia di Westvleteren, guidati dall’abate Jordain.

Le birre di Chimay sono stata tre la prime ad avere ricevuto il marchio ATP come Authentic Trappist Product e il birrificio è diventato uno dei due produttori trappisti più grandi del Belgio e nel mondo. Il monastero si impegna nella produzione di formaggi e di birre che garantiscono la sussistenza dei monaci, che interrompono la produzione in concomitanza con le due guerre del novecento.

Il secondo dopo guerra coincide con l’introduzione di nuove tecniche, l’ampliamento dell’impianto e l’isolamento del famoso lievito di Chimay, che caratterizza le cinque leggendarie birre prodotte dal birrificio trappista. Chimay rimane tuttora il marchio trappista più famoso e diffuso nel mondo.

Bia Chimay đỏ (còn gọi là Chimay Rouge) còn được gọi là “bia tiên phong” do đây là loại bia đầu tiên được các thầy tu ở Bỉ nấu. Từ bia Chimay đỏ, các thầy tu đã mạnh dạn sáng tạo nên nhiều phong cách bia Chimay khác nhau. Với đặc trưng là màu đồng sóng sánh, những chai bia Chimay đỏ đã làm say mê những người sành bia ở khắp tất cả mọi nơi.

Bia Chimay đỏ là một loại bia lên men cao và tiếp tục lên men lại trong chai.

Thành phần của bia Chimay đỏ:

Được sản xuất từ những nguyên liệu chọn lọc và tự nhiên: Nước, malt đại mạch, hoa bia houplon ( Hallertau và Galena) , nấm men đặc biệt riêng của Chimay đỏ nên bia mang chút hương vị thơm thoang thoảng của hoa quả. Bên cạnh đó, mùi thơm ấn tượng nhất là của quả mơ trong quá trình lên men theo công nghệ đặc biệt. Khi nhấp vào ngụm bia đầu tiên, đầu lưỡi bạn sẽ cảm nhận được vị ngọt nhẹ từ mùi trái cây, pha hơi chút đắng đắng đặc trưng của bia.
