A Gueuze egy belga, spontán erjesztett savanyú sörtípus, amely több évjáratú lambic keveréke, mondhatni ezeknek a csúcsa. Itt a frissebb lambicot (~fél éves) keverik öregebb (2-3 éves) lambic sörökkel. Ezt a folyamatot nevezzük blendelésnek. Ezek után a sört palackba töltik és mivel a friss lambicban még van élő élesztő és maradék cukor, megkezdődik a másodlagos erjedés, ami általában 1 évig tart.

Geuze Mariage Parfait is an exceptional example of craftsmanship when it comes to blending Lambic beers. Only the finest three year old Lambics are selected to be accompanied by a small percentage of young lambic in a perfect marriage made in brewing heaven. At Boon, it’s all about balance, so in order to provide the Old Style Geuze Mariage Parfait with enough body to withstand the abundance in different flavours, the especially brewed Lambics have a high degree of fermentation resulting in an alcoholic content of 8% abv. Pour slowly into dry flute glasses without disturbing the yeast sediment in the bottle and enjoy this epitome of traditional Lambic brewing. The end result is a refined combination containing the fruitiness of lime zest and tangerine, smooth vanilla, slightly tart, palate refreshing acidity and a warming mouthfeel. Boon Geuze Mariage Parfait is unsweetened, unfiltered and unpasteurized. To complete the perfect marriage, it is bottle conditioned and can be stored up to 20 years. Boon Geuze Mariage Parfait má obsah alkoholu 8%. Skládá se z 95 % z mírného lambiku, starého minimálně tři roky a speciálně vyhrazeného pro tento účel, a z 5 % z mladého lambiku. Ten poskytuje zkvasitelné cukry a divoké kvasinky. Po promíchání v nádobě o objemu 25 000 litrů se mladina (nefermentovaná směs) filtruje a ochladí. Pokud stáčíme, přivedeme zpět na fermentační teplotu. Láhve jsou umístěny v klimatizovaném prostoru pro sekundární fermentaci. Následuje zrání při nízké teplotě po dobu minimálně 6 měsíců.
