Rochefort producerer i alt 3 øl, hvoraf Rochefort 6 er den ældste, og derfor er det den originale Rochefort opskrift, der ligger til grund for denne øl. Rochefort 6 er ikke så kendt, som de to andre øl i serien (8 og 10). Det skyldes måske, at den kun bliver brygget to gange årligt, og derfor kan den i perioder være svær at fremskaffe. Dette skal kombineres med, at den kun udgør ca. 5% af den samlede produktion. Aromaen er sødlig og frugtagtig, men måske med en overvægt af rosin. Farven er vinrød, og skummet er pæn knækket hvid, men holder ikke så lang tid som hos Rochefort 8 og 10. Smagen er forholdsvis mild med alle de kendte lakrids og frugtagtige nuancer, der kendetegner alle de tre øl fra klosteret. Efter sigende er det munkenes egen favorit øl, og det er bestemt en øl, man bør smage.

Rochefort è uno dei marchi trappisti più famosi al mondo, uno dei sei birrifici del Belgio che possiede la denominazione di Authentic Trappist Product. La Brasserie di Rochefort si trova all’interno dell’Abbazia di Notre Dame de Saint Remy, in Vallonia, nel piccolo paese di Rochefort.
L’abbazia viene costruita nel 1230 mentre la produzione della birra inizia con l’arrivo dei monaci trappisti nel 1464, anche se il primo documento ufficiale che conferma l’attività brassicola è datato 1595. La produzione subisce delle pause in occasione dei grandi eventi della storia europea, ma dal 1952 continua ininterrottamente.
Le tre birre di Rochefort vengono prodotte con il proprio lievito e con l’acqua proveniente dalla fonte all’interno del monastero, e vengono fatte per un numero di settimane equivalente alla denominazione, adottata secondo la scala di Baumè.

Phong cách Dubbel
Trappistes Rochefort 6 là một bia thầy tu (Trappistes) được sản xuất theo phong cách dubbel truyền thống. Bạn đã biết về Phong cách Dubbel ?
Bia Dubbel của Bỉ là loại bia mạch nha đậm đà với một số đặc tính cay hoặc phenolic và cồn nhẹ. Không có nhiều hương trái cây như Bia đen đậm của Bỉ, nhưng có thể có một số hương vị và mùi trái cây sẫm màu. Màu hổ phách trung bình đến nâu sẫm.

Nguồn gốc của bia Rochefort có từ trong tu viện. Tu viện có lịch sử lâu đời từ thế kỷ 13. Hoạt động nấu bia tại địa điểm này bắt đầu từ thế kỷ 16. Các tu sĩ nấu bia chủ yếu để phục vụ nhu cầu của bản thân và khách của tu viện.
Nhà máy bia như hiện nay đã được hiện đại hóa vào thế kỷ 19. Họ vẫn được các tu sĩ tiếp tục nấu bia Bỉ truyền thống. Sản lượng vẫn tương đối nhỏ, đảm bảo chất lượng bia được ưu tiên hơn số lượng.
Bia của nhà máy bia Rochefort chỉ có 3 loại: Trappistes Rochefort 6, Rochefort 8 và Rochefort 10.. Trong số đó, Trappistes Rochefort 6 là loại bia nhẹ nhất trong bộ ba, với nồng độ cồn theo thể tích là 7,5%.

Bia Trappistes Rochefort 6 nên được phục vụ ở nhiệt độ khoảng 12-14°C . Đừng uống quá lạnh, nó sẽ không phát huy được độ ngon. Loại bia này uống trong mùa đông ở Việt Nam thì thật vừa vặn !
Nên sử dụng loại ly goblet hoặc chalice, có chân và miệng rộng. Ly này giúp giữ được hương thơm và tạo ra một lớp bọt dày, mịn màng trên bề mặt bia. Lớp bọt này cũng giúp giữ cho bia không bị oxy hóa quá nhanh.
Trappistes Rochefort 6 kết hợp tuyệt vời với các món ăn như thịt nướng, phô mai đậm vị. Chọn như phô mai xanh hoặc Gouda già nhập khẩu. Các món tráng miệng từ chocolate hoặc caramel. Trâu gác bếp Tây Bắc cũng sẽ hợp với bia này.
