Rochefort 6 is meteen hun lichtste variant in hun reeks.
Met slechts 7,5% alcohol en een licht bruine/amberkleurige kleur is hij niet te vergelijken met zijn donkere broeders de Rochefort 8 en de Rochefort 10.
De smaak is licht fruitig, heeft een toets van karamel en een kenmerkende smaak van brood/gist. Een matig bittere afdronk is typerend.

Rochefort producerer i alt 3 øl, hvoraf Rochefort 6 er den ældste, og derfor er det den originale Rochefort opskrift, der ligger til grund for denne øl. Rochefort 6 er ikke så kendt, som de to andre øl i serien (8 og 10). Det skyldes måske, at den kun bliver brygget to gange årligt, og derfor kan den i perioder være svær at fremskaffe. Dette skal kombineres med, at den kun udgør ca. 5% af den samlede produktion. Aromaen er sødlig og frugtagtig, men måske med en overvægt af rosin. Farven er vinrød, og skummet er pæn knækket hvid, men holder ikke så lang tid som hos Rochefort 8 og 10. Smagen er forholdsvis mild med alle de kendte lakrids og frugtagtige nuancer, der kendetegner alle de tre øl fra klosteret. Efter sigende er det munkenes egen favorit øl, og det er bestemt en øl, man bør smage.

A “Trappist” has to satisfy a number of strict criteria proper to this logo before it may bear this name:
The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision.

The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need.
