Sprong is a blend of wild ales, aged in oak puncheons (500L) for around 2.5 years, and a barrel fermented and aged saison type of beer. This saison was fermented in a large oak vessel and later transferred to oak barriques (225L) for another 6 months. Prior to blending the two parts together, the saison was slightly dryhopped for another 3 months. We’ve added a touch of Sicilian sage to the final blend to macerate a few days before bottling.

Tommie Sjef Sprong è una miscela di wild ales invecchiate in botti di rovere (500L) per circa 2,5 anni, e un tipo di birra saison fermentata e invecchiata in botte.
Questa Saison e è stata fermentata in un grande foeder di rovere e successivamente trasferita in barriques di rovere (225L) per altri 6 mesi.
Prima di blendare le due parti, la saison è stata leggermente ha subito un dry hopping per altri 3 mesi.
E’ stato inoltre aggiunto un tocco di salvia siciliana alla miscela finale e fatta macerare qualche giorno prima dell’imbottigliamento.
Dall’ aroma si percepiscono toni erbacei e floreali come calendula, salvia, paglia e camomilla.
Ricorda una giornata piuttosto fredda ma soleggiata in una fattoria: l’odore delle erbe, della paglia, della terra, delle stalle, ma tutto in modo sottile.
L’acidità media e l’amaro deciso conferiscono alla birra un carattere fresco e spensierato.
Alcune note dalla botte, come bucce d’uva bianca e mele completano questa spensieratezza con un po’ più di struttura in bocca e una sorta di robusta complessità.
Sprong è perfetta da gustare in primavera, ma è perfetta anche per qualsiasi altra giornata di sole dell’anno. L’invecchiamento riequilibrerà i sapori e darà spazio a sfumature più sottili nell’aroma e nel gusto.
Sarà interessante osservare l’interazione di salvia, luppolo e profilo di lievito durante il processo di invecchiamento.
