A Brett a sörfőzők rövidítése a Brettanomyces-re, egy vad élesztőtörzsre. Rendkívül komplex savas ízvilágot tudnak kölcsönözni a sörnek. A magyar nyelvben negatívként hangzó jelzők, mint például az istállószag, lópokróc illat és ízvilág jellemzi ezeket a söröket. Mivel vadélesztőkről beszélünk, amik folyamatosan változnak, érnek, igen nehéz két egyforma ízvilágú sört lefőzni.

Oude is a very special blend of wild ales aged for 1 up to 4 years. Over 1/3 of the total blend is aged in oak puncheons (500l) for 4 years. We’ve never used such an old beer in our blends so far. This gives the final beer a characterful and complex taste. Another 50% is a younger beer of 1 years old which adds freshness, herbal and floral qualities to the blend. The remaining part of the blend is a 2 year old beer that acts as a bridge between the old and young.

Tommie Sjef Oude è una miscela molto speciale di ale selvatiche invecchiate da 1 a 4 anni.
Oltre 1/3 della miscela totale viene invecchiata in botti di rovere (500l) per 4 anni.
Finora non era mai stata usata una birra così vecchia nelle miscele Tommie Sjef.
Questo conferisce alla birra finale un gusto caratteristico e complesso.
Un altro 50% è una birra più giovane di 1 anno che aggiunge freschezza, qualità erbacee e floreali alla miscela.
La parte restante della miscela è una birra di 2 anni che funge da ponte tra il vecchio e il giovane.
Nell’aroma avvertibili limoni freschi e lemon curd, pesche e albicocche, note leggermente erbacee e floreali come petali di rosa, ma anche aromi più caramellati e più fruttati come quelli che rintracciabili in un vino ossidato (es. sherry o porto). Quando si beve Oude, queste note sono evidenti nel retrogusto.
Nel medio gusto una buona quantità di legno, cantina polverosa e note di frutta a nocciolo.
L’Oude è già buona da bere durante l’estate, ma ha gran potenziale di invecchiamento, dimenticandola in cantina per un paio d’anni si bilanceranno i sapori e ammorbidiranno i tannini.
