Sahati è l’interpretazione di The Ale Apothecary dei Sahati finlandesi.
Approfittandone di un albero di 200 anni caduto vicino il birrificio, i ragazzi di The Ale Apothecary hanno costruito il loro Kuurna, utile per separare i grani dal mosto durante il raffreddamento in questa originale coolship. Sul fondo del Kuurna vengono adagiati rami di abete che oltre a rilasciare oli e resine fungono anche da filtro.
Il processo di fermentazione avviene in botti aperte poste in posizione verticale per mezzo di lieviti e flora batterica locale. Il mosto subisce anche un’abbondante luppolatura con Cascade.
Il risultato è una birra dall’acidità decisa, molto complessa, facilmente avvertibili aromi resinosi e legnosi che si legano bene con note più citriche e fruttate.
