St Bernardus – Wit. Después de que en 1945 la abadía de San sixto suspendiera la venta de cerveza, concedieron la licencia a la quesería, fundándose Sint Bernardus Brouwerij. Es cuando Matheu szafranski se convierte en socio de la fábrica de cerveza llevando consigo las recetas, experiencia y cepas de levaduras que usaban en San Sixto (la famosa Westvleteren , conocida por lo caro y exclusivo de sus cervezas). En 1992 se rompe el acuerdo de 1962 por el cual Deconinck se encargaba de la fabricación y distribución, siendo fabricada a partir de entonces bajo el nombre de St Bernardus . Esto es debido a que los monasterios trapenses llegan a un acuerdo para regular la etiqueta de “auténtica cerveza trapense”, poniendo como condición que se elaborara dentro de los muros del monasterio.

St.Bernardus – Wit es una cerveza de trigo tradicional belga de 5,5%. Desarrollada en colaboración con el legendario brewer Pierre Celis, que hizo resurgir este estilo en los años 60. Con un auténtico aspecto turbio de color amarillo pálido. Gracias al cilantro, clavo y la corteza de cítricos, tiene un toque especiado, refrescante y equilibrado.

NOTA DE CATA: Color dorado pajizo, aspecto ligeramente velado y capa de espuma blanca, gruesa y esponjosa. Aromas a cereal, pan, cítricos y un toque de miel. En boca es ligera y refrescante, con una textura acuosa y una carbonatación alegre. Buen equilibrio entre dulzor y acidez.
