St.Bernardus Abt 12 heeft een zeer fruitig aroma, afkomstig van onze eigen specifieke gist. Het zit boordevol complexe smaken en blinkt uit door zijn lange bitterzoete afdronk. Het bier laat zich vlot drinken door zijn zachte volmondige smaak en perfecte evenwicht tussen bitter en zoet. Een Abt drinken is met volle teugen van het leven genieten.
Culinair
Door zijn smaakvolle karakter kan de Abt 12 zijn mannetje staan tegenover een waaier aan rijke vleesgerechten en wild bereidingen, zoals bijvoorbeeld stoverij en konijn. Blauwe kaas, bijvoorbeeld Roquefort, vormen ook een ‘perfect match’ met de Abt 12. En vergeet niet om hem te combineren met chocolade, voor een onverwachte maar zeer geslaagde combinatie.

Begin de jaren 1900 vluchtten de Trappisten van de Catsberg (Mont des Cats) naar Watou. De boerderij werd omgedoopt tot ‘Réfuge de Notre Dame de St.Bernard’ en daar werd kaas gemaakt. De kaasmakerij werd overgenomen door Evariste Deconinck. Kort na de tweede wereldoorlog kreeg Evariste Deconinck de vraag van de trappisten van Westvleteren om hun trappistenbieren te commercialiseren en te brouwen onder licentie. In 1992 kwam een einde aan de overeenkomst omdat de Trappistenbouwerijen beslist hadden de kwalificatie “Authentic Trappist Beer” enkel nog toe te kennen aan bieren gebrouwen binnen de muren van de abdijen. Vanaf dan werden de bieren verkocht onder de merknaam ‘St.Bernardus’. In 1998 nam Hans Depypere de brouwerij over. Langzaam maar gestaag zette Hans de brouwerij terug op de rails. De brouwerij gebruikt steeds twee soorten mout, namelijk altijd bleke mout en indien zij donkere bieren brouwen wordt ook donker gebrande mout toegevoegd aan de brouwketel.

In 1945, Trappist monastery St. Sixtus stopped selling its beer and an agreement was reached where the monks would brew beer for themselves and the beer could only be bought at the monastery and associated taverns. They gave a license to the local cheese factory, and Brewery St. Bernard was founded. The brew master from Westvleteren, Mathieu Szafranski (of Polish origin) became a partner in the brewery and brought along the recipes, the know-how and the St. Sixtus yeast strain. Since 1992 the beers brewed in Watou have been sold under the brand name St. Bernardus. The St. Bernardus range is considered a close match in recipe and style to the St. Sixtus beers, which can be hard to obtain outside the area.
