Cisterciensermunkene på Orval klosteret brygger kun en øl til offentligheden. Der er tale om en Trappist øl og derfor underlagt de strenge regler desangående. Der bliver produceret ca. 70.000 hektoliter af øllet hvert år, og overskuddet går til socialt arbejde og vedligeholdelse af klosteret. Når årets produktion er solgt – ja, så er der ikke mere. Det betyder, at munkene er meget tro overfor deres produkt! Langt de fleste ølelskere roser denne øl og kalder den blandt verdens allerbedste – men den har bestemt også sine kritikere. Aromaen består nærmest af syrlig frugt, brød, vin og vindruer. Farven er nærmest ravgul med et pænt lyst skum. Smagen er i første omgang let frugtagtig, men forvandler sig ret hurtigt til en lidt tør smag. Denne forvandler sig igen til en let bitter, men meget behagelig eftersmag.

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster. In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.

The beer was first brewed in 1931 and owes its unparalleled taste to the quality of the water, the hops and the yeast used. The brewery has selected very aromatic and unique hop varieties, which hark back to the first brewmaster of Orval, who hailed from Bavaria. The beer’s aromas are very pronounced while maintaining the right level of bitterness thanks to the English method of dry hopping.
The various stages of fermentation – combined fermentation with the original yeast and with wild yeast, followed by fermentation in the bottle – mean the beer must age for some time and requires numerous quality controls.

Thích hợp nhất để thưởng thức bia Orval là sử dụng loại cốc đặc trưng dành riêng cho loại bia này. Cốc bia có hình như hình tam giác, có viền màu bạc và có chữ “Orval” được in trên thân cốc.
Hãy cầm thật chắc chiếc khui khi mở nắp chai bia. Đừng bao giờ dùng những vật khác để thay thế như bật lửa hoặc dao. Khi mở nắp chai, ấn nhẹ nắp chai để giữ cho nắp ở nguyên vị trí trên miệng chai. Bạn sẽ thấy có hơi thoát ra từ miệng chai. Khi bỏ nắp, bạn sẽ nhìn thấy hơi bay nhè nhẹ trên miệng chai.

Située en Belgique, l'abbaye d'Orval signe une bière de dégustation trappiste exceptionnelle qui tend à se raréfier en cherchant à respecter la tradition trappiste. En effet, seulement 7 brasseries sont autorisées à apposer l’appellation « Authentic Trappist Product » sur leurs produits. Pour cela, les bières trappistes doivent être brassées au sein même de l’abbaye et contrôlées exclusivement par des moines. De plus, les bénéfices doivent être consacrés à la vie des moines, et les excédents reversés à des œuvres de charité, en cela la production des bières est donc limitée à leurs seuls besoins. Ces contraintes limitent donc la production des bières dans l’objectif de conserver un savoir-faire et une tradition vielle de plusieurs dizaines d’année. Aujourd’hui, la bière Orval est considérée comme étant l’une des meilleures bières, mais aussi l'une des plus rares au monde. La légende d’Orval
L’emblème de la brasserie met en scène une truite avec un anneau dans la bouche. Selon la légende, en 1070, la comtesse Mathilde fit tomber son alliance dans un ruisseau. C’est alors qu’une truite jaillit de l'eau pour lui rendre sa bague. Or, il faut savoir que l’eau utilisée pour la fabrication des Orvals provient d’une source d’eau pure hautement qualitative se trouvant dans l’enceinte de l’abbaye.
