Toen de onvermijdelijkheid van de landbouw duidelijk werd, gingen ze op zoek naar een alternatieve bron van inkomsten en gemeenschappelijk werk. Hun doel was om een industrie op te zetten waarbij velen van hen betrokken zouden kunnen zijn. Het brouwen voldeed aan hun eisen. Na veel zorgvuldig onderzoek en gemeenschapsdiscussie besloten ze de biertraditie van de abdij nieuw leven in te blazen.
In 2017-2018 hebben ze hun refter, keuken en wasruimte verplaatst om ruimte te bieden voor de installatie van een nieuwe ambachtelijke brouwerij. Ze zullen het productievolume relatief klein houden. Net genoeg om hun uitgaven te dekken en hun liefdadigheidsverplichtingen te ondersteunen. Sinds 2018 is de brouwerij hun voornaamste arbeidsterrein. Al het werk, van het brouwen tot het bottelen en verpakken, wordt gedaan door de monniken.
Dit alles is het resultaat van veel voorbereiding en onderzoek. Toen ze besloten hadden een brouwerij op te zetten, begonnen ze te oefenen met een klein thuisbrouwpakket. Ze hebben met verschillende bieren geëxperimenteerd om ervaring op te doen en naar een definitief recept toe te werken. De monniken van Norcia, Saint-Wandrille en Zundert hebben hun veel geleerd en waren genereus in het delen van hun eigen brouwervaring. Ze hebben waardevol advies gekregen van de elf andere trappistenbrouwerijen en van de International Trappist Association.
Cisterciënzers waarderen de waarde van eenvoud. Eenvoud staat niet voor iets dat eenvoudig of goedkoop wordt gedaan, maar vertegenwoordigt eerder een distillatie van complexiteit. Het gaat erom een rijke, gevarieerde werkelijkheid zo te verwerken en te ordenen dat het resultaat vanzelfsprekend lijkt: ‘Zo moet het zijn!’ Ze zien deze kwaliteit aan het werk in de manier waarop de vroege cisterciënzers hun kerken bouwden, gecomponeerd hun muziek, schreven hun preken, bewerkten hun land. Ze hopen dat jij het ook herkent in de manier waarop zij hun bier brouwen.
