La Sirène Brewing Saison

Our award-winning Classic Saison is a rustic Farmhouse Ale that expresses a sense of place, time & season. We Open-ferment this Farmhouse Ale which allows airborne indigenous wild yeast & bacteria to partake in the fermentation. After allowing the Saison to naturally ferment at its own pace, we then take it strictly to French oak barriques where it undergoes a secondary slower fermentation and maturation where the complex flavours & sourness aspects develop. This artisan ale is then blended to taste from various barrels in our House style and is 100% bottle re-fermented for up to 3 months for a Champagne-like finish.

We have renamed this iconic classic FLOR SAISON as a nod to the oxidative airborne yeasts & bacteria that are found on the surface of our Saisons as they age and ripen in barrel. These native wild yeasts come from the walls of our brewery’s microbial-rich environment and find their way into our fermentations. FLOR SAISON is Open Fermented in large French Oak Vats with no temperature control or anything like that, which is one of the reasons why La Sirène Saisons taste like no other on the planet! Our location next to 130 Acres of native parklands (Darebin Parklands) including the Darebin creek watercourse and all less than 8 km form the Melbourne CBD provides for an intersection of microbial influences (both rural & domestic) that play out in a hybrid way for the creation of our Wild Ales. We believe it is this site specific reason that drives our ability to be able to do what we do. BREWERS NOTES People that know us will know that creating Saisons & Farmhouse Ales is not recipe or formula driven.. We allow our natural yeasts & bacteria to drive the creation of these highly expressive wild ales from batch to batch. This best represents and honours the true origins of Saisons in our opinion, a naturally fermented Wild Ale that can only be defined and judged for that matter by its ability to express the Seasonal and Microbiotic influences of a specific site at a particular point in time and of course represent it’s makers to some degree in ethos and craft.
