Omdat de brouwers ons dit jaar nostalgisch voelden, doken de brouwers in onze kluis in Bourbon County en haalden er een iconisch recept uit. In 2013 brachten de brouwers ‘Backyard Rye’ uit en onze senior innovatiemanager Mike Siegel merkte dat hij met de hand moerbeien van bomen plukte op een steenworp afstand van ons Goose Island Barrel House in Chicago. Geïnspireerd door die eerste release en door zijn eigen jeugdherinneringen aan het plukken van fruit in zijn eigen achtertuin, ging Mike dit jaar aan de slag met de Bourbon County Backyard Stout.⁠ ⁠ ⁠ Deze op vat gerijpte stout werd eerst minimaal een jaar gerijpt in bourbonvaten, daarna afgewerkt en gemengd met moerbeien, boysenbessen en marionbessen. Elke toevoeging van bessen draagt bij aan zijn eigen specifieke smaakprofiel, waarbij sommige zoetheid toevoegen en andere zorgen voor zuurgraad en complexiteit. Deze imperiale stout is een voorproefje van het verleden en is een evenwichtig en genuanceerd spel met vers fruit, vanille en chocolade.
