Simple Things Fermentations say “These are *lowers voice*… the beers we always said we wouldn’t make. “Hazy pales hopped with the same handful of varieties. The world doesn’t need another brewery turning those out.” That was my mantra, and in fact I stand by it. But – an epiphany! We can do those, AND we can carry on producing a broad range of other styles too. “It took a bit of work to get these right. “Some of the most significant strands of our brewery DNA stem from traditional equipment. No snazzy conical DPVs for us. Open fermenters! Limited temperature control! Semi-automatic can filling! All of which present challenges as well as opportunities, and never more so than when producing pale, hoppy beers. We thought long and hard; we tweaked, adjusted and analysed. Tightened everything the fuck up – literally and metaphorically. And it worked! We’ve spent very little money (hooray!) but the benefits are huge. I’ve never been happier and more proud of the beer quality we’re now able to produce from our modest facility. And it’s still demonstrably ours. “So here’s the crux – these new ones are beer like everyone else does, but done our way. Softer, smoother natural carbonation allows flavours to pop more clearly, and hold on to freshness for longer. The same soft water and recipe approach we’ve always used play their part too.
