Zigurat Mincay
Zigurat Mincay is a sophisticated Grape Ale that elegantly bridges the gap between a sharp, refreshing Berliner Weisse base and the rustic depth of Carignan grape must. It pours a vibrant burgundy, releasing a complex bouquet where clean lactic tartness meets concentrated notes of plum and red berries. The addition of Carignan grapes introduces subtle earthy undertones and a hint of dark fruit skin, perfectly integrated with the light, bready wheat malt. On the palate, a crisp acidity drives a bone-dry finish, complemented by sparkling carbonation and a gentle alcohol warmth that highlights the wine-like character of this unique hybrid.
Appearance. SRM 12-15; deep ruby to burgundy with brilliant clarity. Pours with a moderate pinkish-white head that shows medium-low retention, leaving light lacing.
Aroma. Moderate to high intensity featuring prominent dark fruit notes of plum and cranberry from the Carignan grapes. A clean, lactic sourness from the base beer blends with soft bready wheat malt and very low spicy yeast esters. No hop aroma.
Taste. Initial impression is sharply tart and refreshing. Dominant flavors of red grape and berries follow, supported by a subtle, rustic earthiness characteristic of the varietal. Malt flavor is low and cracker-like. Hop bitterness is very low, allowing the acidity to provide balance. The finish is exceedingly dry, crisp, and vinous with a lingering tart berry aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. A noticeable but well-integrated alcohol warmth is present. Low astringency from the grape skins contributes to a crisp, mouth-watering sensation.
