This Pale Grape Ale presents a sophisticated bridge between a crisp, sparkling wine and a refined pale base. Zigurat DinoSour leads with an aromatic bouquet of white grapes, offering nuances of stone fruit and white blossoms that meld seamlessly with a restrained, crackery pilsner malt foundation. Despite the suggestive name, the profile remains elegant and bright rather than aggressively acidic, characterized by a clean fermentation and very low hop influence. The experience is defined by its high effervescence and an exceedingly dry, bone-dry finish, showcasing the delicate vinous quality of the fruit must without the funk of a lambic.
Appearance. Pale straw to gold (4-5 SRM). Brilliant clarity with no haze. White head with medium-low retention and light lacing.
Aroma. Moderate aroma intensity featuring white grape varietal notes of gooseberry and white peach. Supportive low pale malt sweetness. Restrained floral hop character. Clean fermentation with very delicate fruity esters and no spicy phenols.
Taste. Bright, vinous initial impression with prominent white grape flavors and a mild tartness that improves digestibility. Malt character is supportive, providing light cracker-like notes. Hop bitterness is very low (approx. 15 IBU) and hop flavor is absent. Exceedingly dry, crisp finish with a lingering grape skin aftertaste.
Mouthfeel. Medium-light body with high carbonation that creates a sparkling, effervescent sensation. No alcohol warmth is perceived at this strength. Light acidity contributes to a very dry mouthfeel with no astringency.
