This vibrant Brett Beer celebrates the essence of summer with an intense infusion of redcurrant and blackcurrant. Fermented in oak barrels with a six-month-old wild ale base, it presents a complex tapestry of tart berry fruit and rustic funk. The aroma is a bouquet of sun-ripened currants, wet hay, and subtle woody tannins. On the palate, the sharp acidity of the ribes genus cuts through a bone-dry finish, revealing layers of earthy fermentation character and soft oak. It is a refreshing, highly attenuated experience that captures a juicy, wild spirit through its high fruit concentration and crisp, wild fermentation profile.
Appearance. Deep ruby to magenta color (SRM 20-25) with a slight haze. Persistent, light pink foam head with moderate lacing and good retention.
Aroma. High intensity; dominated by bright, tart redcurrant and deep, earthy blackcurrant. Complemented by moderate Brettanomyces funk including notes of wet hay and barnyard, alongside a subtle, vanillin-like oak character and very low cracker-like malt.
Taste. Initial sharp fruit tartness followed by flavors of tart red berries and jammy blackcurrants. The fermentation character provides an earthy, rustic complexity. High attenuation leads to a bone-dry, crisp finish with lingering fruit skins and very low hop bitterness. No harsh phenols or acetic notes.
Mouthfeel. Medium-light body with high carbonation that creates a spritzy, refreshing texture. Minimal alcohol warmth; crisp and slightly puckering without being overly astringent.
