Was first brewed in 1934 and the recipe has not changed since 1956. It is made with pale candy sugar and has a very pale color produced from a mash of light pilsener malts. Styrian Goldings hops are used along with some German varieties and the classic Saaz pilsener hop. After a long secondary fermentation, the Tripel Westmalle is bottled with a dose of sugar and yeast. This beer holds up well in the bottle over time and seems to soften with age.

A “Trappist” has to satisfy a number of strict criteria proper to this logo before it may bear this name:
The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision.
The brewery must be of secondary importance within the monastery and it should witness to the business practices proper to a monastic way of life
The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need.

Westmalle è un birrificio trappista belga situato all’interno dell’Abbazia di Nostra Signora del Sacro Cuore di Westmalle, nel comune di Malle, nelle Fiandre. Westmalle è indubbiamente, insieme a Chimay, il maggior produttore di birre trappiste, nonché uno dei più conosciuti a livello mondiale.
Il monastero viene fondato nel 1794 da un gruppo di monaci trappisti francesi e diventa abbazia nel 1836, anno nel quale inizia la produzione di birra. Inizialmente destinata al consumo dei monaci, la birra di Westmalle viene commercializzata all’esterno dell’abbazia dal 1856. L’impianto produttivo subisce continue migliorie, arrivando ad una resa annua superiore a centomila hl, buona parte dei quali vengono destinate alla vendita al di fuori del Belgio.
Le birre prodotte sono divenute nel tempo dei riferimenti per gli stili birrari che rappresentano, mentre una sola tipologia, la Extra, rimane ad esclusivo consumo dei monaci.
