La Westmalle Extra, descrita como “ligera en alcohol y algo dulce”, llamada también “gersten extra” o “patersbier”, es la cerveza de mesa que siguen consumiendo los monjes en sus comidas, como parte fundamental de su dieta y con la limitación de una al día. La Westmalle Extra nunca se ha vendido comercialmente al público en general aunque sí se ha vendido, a clientes privados, cantidades limitadas, en momentos que había más existencias de las que los monjes podían consumir porque su elaboración se limita a dos veces al año. El monasterio en el que se encuentra, ubicado, entre la ciudad de Amberes y la frontera con Holanda, fue fundado en 1794, aunque no es hasta el 22 de abril de 1836, fecha en la que se convierte en abadía trapense, cuando comenzó a elaborar cerveza. A partir de 1856 comenzaron a comercializarla en la puerta del propio monasterio, con tanto éxito, que en solo un periodo de dos años (1865 y 1867) tuvieron que ampliar dos veces su fábrica. En 1921, los monjes deciden vender su propia cerveza a otros comerciantes a medida que crecía la demanda. Durante su historia, los monjes no han dudado en recurrir a las nuevas técnicas y desde hace más de 180 años, la fábrica solo elige las materias primas más puras. Así se elabora una cerveza tradicional, lejos de todas las tendencias actuales, lo que les ha llevado a ser la cervecería trapense con mayor producción. Se ha centrado en la elaboración de dos variedades: la Westmalle Dubbel y la Westmalle Tripel, consideradas modélicas dentro de sus respectivos estilos, y una referencia a imitar e imitada por otros productores.
La Pasterbier de Westmalle
Vista: una cerveza de color amarillo dorado, brillante, y con una espuma blanca fina, abundante y compacta. Olfato: en aroma resalta su intensidad, con notas afrutadas y especiadas.
Gusto: en boca resulta igualmente afrutada y especiada.
Sensación: presenta un cuerpo ligero, con una buena carbonatación y una textura aterciopelada. Es una cerveza muy refrescante, ligera y bebible.

“Extra è una delle più antiche birre di Westmalle e le sue origini risalgono al 1836, quando i Trappisti di Westmalle decisero di produrre la propria birra per accompagnare i pasti nel refettorio. Tradizionalmente brassata due volte l’anno, finora è stata venduta solo nel Café Trappisten, situato di fronte all’abbazia. Negli ultimi anni, la domanda per birre più leggere è aumentata considerevolmente, così come per la nostra Extra. Per questo motivo, abbiamo deciso di rendere la Westmalle Extra disponibile su larga scala attraverso canali di rivendita specializzati. In tal modo, la birra sarà disponibile anche in caffè e ristoranti. L’abbazia vuole offrire qualcosa di straordinario ai gestori di bar e ristoranti, pesantemente colpiti dalla pandemia, in previsione della loro futura riapertura. La Westmalle Extra è una Patersbier (Trappist Single), fedele alla nostra filosofia di produzione, poiché prodotta con gli ingredienti più puri: varietà di orzo selezionate, una miscela equilibrata di fiori di luppolo, lievito coltivato in casa (lo stesso della Dubbel e Tripel) e acqua pura dallo strato profondo del Diestian.”
Al naso emergono fragranze maltate di pane, cracker e cereali, seguite da profumi floreali, erbacei, speziati e fruttati. Il corpo è medio-leggero con una carbonatazione vivace. Nonostante la bassa gradazione alcolica, ha un gusto ricco con note maltate, floreali, di frutta gialla e spezie. Delicata, scorrevole, piacevolmente rinfrescante e dissetante, termina con un finale secco, moderatamente amaro e leggermente piccante.
