Despite its high strength and nostalgic sweetness, it maintains the aggressive hop-forward character essential to the style. Intense raisin hits meld with high bitterness and complex hop resins, creating a rich, multi-layered profile. It captures the essence of a holiday treat while delivering the assertive punch and resinous depth expected of a strong ale.
Appearance. Deep gold to light orange-copper (10-14 SRM). Features a moderate-sized, persistent, off-white head with good lacing. Clarity is mostly clear with a slight haze acceptable for the high adjunct load.
Aroma. High intensity aroma with prominent American hop characteristics of citrus and resin. This is layered with rich, sun-dried raisin and deep, complex rum notes from barrel oak chips. Malt is supportive and bready, while the fermentation profile is clean with a noticeable but non-solventy alcohol presence.
Taste. Initial impression is creamy and sweet with a nostalgic ice cream character. Strong hop flavors of pine and grapefruit are balanced by dark fruit raisin and vanillic oak. Bitterness is high (70-90 IBU) but smooth. The finish is medium-dry with a lingering hoppy aftertaste and a boozy rum warmth.
Mouthfeel. Medium-full body with a notable creaminess and smooth texture. Carbonation is moderate. Significant alcohol warmth is present, reflecting the 11% ABV, but it remains well-integrated without harshness or astringency.
