This modern American IPA offers a sophisticated interplay of Japanese brewing influence and contemporary hop character. A lean, dry foundation of Pale malt, Vienna, and flaked rice provides a crisp, neutral canvas that allows the aromatic profile to lead. The unique Sorachi Ace hops dominate with signature notes of lemon zest and a herbal wisp of dill, while Citra adds layers of bright, sun-ripened citrus. A subtle, creamy hint of coconut emerges from the Sabro hops, softening the finish. It is a delicate yet distinctive experience, balancing refreshing drinkability with complex, unconventional hop depth for a clean, aromatic finish.
Appearance. Medium gold (7 SRM) with brilliant clarity. Pours with a medium-sized, bright white head featuring good persistence and fine, delicate lacing.
Aroma. High intensity hop aroma featuring prominent lemon zest and herbal dill. Clean, grainy-sweet maltiness with a very light toasted note is present in the background. Supporting notes of grapefruit and a unique, faint hint of creamy coconut are evident. Fermentation profile is neutral and clean.
Taste. Initial impression is hop-forward and crisp. High hop flavor mirrors the aroma with lemon, citrus pith, and a distinctive herbal spice. Low grainy malt flavor with a bone-dry finish. Medium-high bitterness is clean and firm but not harsh. The aftertaste is hoppy and dry with lingering notes of citrus peel and dill.
Mouthfeel. Medium-light body with a smooth, lean texture. Carbonation is medium-high, contributing to a crisp, refreshing mouthfeel. Very light, smooth alcohol warmth is present without any astringency.
