This vibrant Double IPA, a collaborative effort with Omnipollo, delivers a staggering sensory profile defined by its bold hop selection and a strategic addition of passion fruit purée. The aromatics are dominated by the dank pungency of Mosaic, which intertwines with the intense stone fruit of Nectaron and the bright citrus notes of Eclipse. On the palate, the passion fruit cuts through the 8% ABV with a sharp, tropical acidity that elevates the nectarine and mandarin hop flavors. It balances a firm bitterness with a smooth, velvety mouthfeel, concluding in a dry, resinous finish that remains impressively drinkable and complex.
Appearance. Pale gold to light orange-copper (7-9 SRM). Pours with a hazy, nearly opaque appearance typical of modern interpretations. Topped by a dense, white, long-lasting head with significant lacing.
Aroma. Intense hop aroma characterized by a powerful blend of tropical and citrus notes. Prominent passion fruit from the purée merges with the dank, berry-like qualities of Mosaic, the stone fruit and peach sweetness of Nectaron, and the bright mandarin orange of Eclipse. Low grainy malt sweetness and a clean fermentation profile support the hop-forward bouquet.
Taste. Bold initial impression of tart passion fruit and resinous hop oils. The mid-palate reveals layers of nectarine, citrus peel, and a distinct dankness. Bitterness is firm and high but lacks harshness, balanced by a light, supportive malt backbone. The finish is dry and crisp, with lingering tropical fruit and a clean, resinous aftertaste without being heavy or cloying.
Mouthfeel. Medium-full body with a smooth, almost creamy texture. Moderate carbonation provides a gentle lift. A noticeable but well-integrated alcohol warmth is present, though mitigated by the refreshing acidity of the fruit adjunct. No hop-derived astringency.
