This Wild Specialty Beer is a vibrant, sensory-rich session sour defined by an intensive addition of raspberry and pineapple purée. The aroma is dominated by jammy red fruit and tropical citrus, underpinned by a distinctive tangy funk from Vault City’s signature mixed fermentation process. On the palate, the tartness of the raspberry melds seamlessly with the bright, acidic sweetness of pineapple, creating a nostalgic sweet-shop profile. Despite its low alcohol content, the fruit density provides a lush, refreshing character that finishes crisp and clean. The fermentation provides a complex back-end tartness that balances the fruit-forward sweetness without overwhelming the delicate sessionable base.
Appearance. Vibrant coral to deep pinkish-orange hue; hazy to opaque from heavy fruit purée additions. Pink-tinted head with moderate retention and light lacing.
Aroma. High intensity; bursting with fresh, jammy raspberry and bright, tropical pineapple. Underlying lactic tartness and subtle earthy, wild yeast esters such as stone fruit or light hay from the mixed fermentation base. No detectable hop aroma.
Taste. Assertive fruit-forward flavors of tart raspberry and sweet, acidic pineapple. The mixed fermentation provides a tangy, clean lactic sourness that cuts through the fruit sugars. Malt is a neutral backdrop. Bitterness is very low. Finishes dry and refreshing with a lingering fruit salad aftertaste.
Mouthfeel. Light to medium-light body; moderate-to-high carbonation provides a crisp, tongue-tingling sensation. No alcohol warmth. Smooth, slightly creamy texture from the fruit solids, with zero astringency.
