Vault City’s Freaky is an indulgent, high-gravity Straight Sour Beer transformed into a decadent liquid dessert. An intense lactic tartness slices through a viscous, smoothie-like body packed with jammy blueberries, blackberries, and cherries. The sensory profile is dominated by a confectionary mountain of vanilla ice cream and whipped cream, layered with rich caramel and a hint of salt from fudge-dipped pretzels. Crushed cookies add a malty depth to the base, while the 8% ABV provides a warming backbone to this complex, purple-hued milkshake experience that balances sharp acidity with indulgent, pastry-like sweetness.

Appearance. Deep, opaque purple-burgundy; thick, smoothie-like pour with a dense, pink-tinted head that shows poor retention but leaves heavy, syrupy lacing on the glass.

Aroma. High intensity; sharp, clean lactic acidity leads into an explosion of jammy dark fruit—blueberry, blackberry, and tart cherry. Secondary notes of rich vanilla bean, buttery caramel, and a subtle cocoa-dusted maltiness reminiscent of crushed cookies and fudge-dipped pretzels emerge as it warms.

Taste. An initial impact of puckering lactic sourness is immediately softened by massive berry sweetness. Flavors of ripe blueberries and blackberries dominate the mid-palate, followed by a decadent swirl of vanilla cream and salty-sweet caramel. The finish features a lingering fudge and biscuit-like malt character with a tart fruit snap; hop bitterness is undetectable.

Mouthfeel. Full-bodied and exceptionally thick; viscous and creamy milkshake texture with moderate carbonation. Noticeable alcohol warmth is present but well-integrated into the rich, heavy mouthfeel.

We’re Vault City, an independent craft brewery and Scotland’s largest sour beer producer. We make heavily fruited, modern sour beers in (sometimes) sunny Portobello, Edinburgh.

Since 2018, we’ve focussed on relentless exploration when it comes to brewing.
