A vibrant strawberry acidity immediately cuts through a rich, velvety base of hazelnut chocolate and bready malt. The aroma is dominated by ripe berry and cocoa, supported by a gentle lactic tang characteristic of the brewery's house culture. On the palate, the pancake elements emerge as a soft, doughy sweetness that balances the sharp fruit profile, while the chocolate spread adds a smooth, nutty finish. It is a playful, high-intensity sour that masterfully blends dessert indulgence with a refreshing, wild-fermented backbone.
Appearance. Deep reddish-pink with mahogany undertones and a hazy, opaque body. Pours with a moderate pinkish-cream head that settles quickly into a thin ring; some visible particulate from adjuncts may be present.
Aroma. High intensity. Bold, jammy strawberry notes lead, followed by a distinct wave of milk chocolate and roasted hazelnut. A subtle, doughy malt aroma provides a pancake-like foundation, accented by a clean lactic acidity and a faint hint of vanilla.
Taste. Initial burst of tart, juicy strawberry and sharp lactic acidity. This is quickly met by a mid-palate of sweet cocoa and nutty hazelnut spread. The malt provides a bready, cake-like flavor that mimics mini-pancakes. Bitterness is virtually non-existent, overshadowed by the fruit's natural acidity. The finish is long and sweet-tart, blending chocolate richness with lingering berry skins.
Mouthfeel. Medium-full body, surprisingly lush for its ABV due to the adjunct additions. Carbonation is moderate, providing enough lift to prevent the chocolate from feeling heavy. Low alcohol warmth; very slight creaminess with no detectable astringency.
