Sprzedaż była na początku skromna, zakłócona przez dwie wojny światowe. Te wojny ukształtowały także te wczesne piwa – okupant zadekretował, że piwa nie powinny mieć gęstości większej niż 0,8°. Ale zrobiono wyjątek dla tych piw przeznaczonych dla chorych. Mogli osiągnąć nawet 5°.

Tak więc Rochefort 6 zaczął jako piwo przeznaczone wyłącznie do „celów leczniczych”, osiągając swoją obecną formę z niewielką pomocą kolegów trapistów. Po II wojnie światowej, kiedy Rochefort cierpiał z powodu sukcesu Chimay, „konfratrzy” Chimay zgodzili się podać Rochefortowi pomocną dłoń. Pierwszym owocem tej współpracy – i najstarszym członkiem rodziny Rochefort – jest Rochefort 6. Został wprowadzony na rynek w 1953 roku.

Ten wspaniały napar, zwieńczony czerwoną nakrętką, jest produkowany tylko przez kilka tygodni w roku. Serwuje się go głównie w kwaterach gościnnych opactwa. Spośród członków tria Rochefort jest to najłagodniejsza i najbardziej sucha odmiana. Rochefort 6 z pewnością ma charakter, ale jest mniej bogaty i złożony niż jego dwóch braci. Piwo łagodne i owocowe, lekko ziołowe, słodowe i słodkie, z domieszką karmelu. Spokojna goryczka, którą ma, ujawnia się dopiero na finiszu.
