Birra Toccalmatto

This homage to the classic Belgian Saison presents a beautifully opalescent body, courtesy of its grist of barley, wheat, and oats. The fermentation profile is the star, driven by a specific yeast strain that radiates floral and spicy esters. These yeast notes are expertly complemented by the earthy, floral contributions of E.K. Goldings and the clean, spicy touch of Perle hops. At 6% ABV, it strikes a balance between refreshment and complexity, finishing remarkably dry and drinkable. This Saison captures the rustic spirit of the style, offering a sophisticated interplay of grainy sweetness and a vibrant, peppery finish.

Appearance. Pale gold to light orange with an opalescent, hazy clarity from the wheat and oats. Topped by a dense, rocky, long-lasting white head that leaves significant Belgian lace.

Aroma. Moderate to high intensity with a complex bouquet of black pepper spiciness and floral esters. The continental hop character from Perle and E.K. Goldings adds earthy and herbal nuances. Low grainy malt notes from the wheat and oats are present in the background.

Taste. Begins with a soft, grainy malt presence that quickly gives way to high attenuation and a very dry finish. Hop flavors of earth and spice are balanced by a moderate bitterness. The yeast provides a spicy, peppery aftertaste and a light fruitiness. Extremely clean and well-structured.

Mouthfeel. Medium-light body with very high, effervescent carbonation. There is a light, well-integrated alcohol warmth and a crisp, refreshing quality without any astringency.

Al naso fragranze di cereali, spezie (coriandolo e pepe), scorza d’arancio e limone, note floreali e fruttate. Nessun colpo di scena in bocca dove ritroviamo le sensazioni percepite al naso con una leggera nota amarognola. Termina secca, con un lungo retrogusto amaro dove ritornano note di scorza d’arancio.
