Ambrosia is an elegant Witbier that reimagines the Belgian classic with a fragrant Mediterranean twist. The addition of wheat flakes and oat flakes creates a soft, hazy foundation for the zesty aromatics of coriander, orange, and lemon. This profile is elevated by a distinct perfumy note of bergamot, which integrates seamlessly with the earthy, spicy undertones of Challenger hops. The palate offers a refreshing, bready malt core and a vibrant citrus melody, finishing crisp and dry. Its high carbonation and light, creamy texture make it a quintessential summer ale, balancing sophisticated spice with high drinkability.

Appearance. Very pale straw, approximately 3 SRM. Significant starch haze provides a milky, opalescent appearance. Features a dense, white, moussy head with excellent retention and light lacing.

Aroma. Moderate intensity with a bready, grainy wheat malt presence. Pronounced perfumy citrus notes of bergamot and lemon zest are complemented by a spicy, herbal coriander character. A very low earthy, floral hop aroma from the Challenger variety lingers in the background.

Taste. Initial impression is of soft, bready malt and grainy wheat. Mid-palate showcases complex citrus flavors including sweet orange and tart lemon, followed by a subtle herbal spice. Hop bitterness is low, approximately 15 IBU, serving only to balance the malt. The finish is remarkably clean, dry, and refreshing.

Mouthfeel. Medium-light body with a notable smoothness and light creaminess derived from the use of oat flakes. High carbonation provides an effervescent, lively sting on the tongue. Zero astringency or alcohol warmth.
