Sur Amarillo is an assertive Straight Sour Beer that bridges the gap between a tart imperial ale and a traditional sour. The heavy use of Amarillo hops delivers a pungent floral and citrus punch, specifically evoking notes of orange peel and grapefruit, which intertwines with a sharp, clean lactic sourness from the sour mashing process. A grist featuring wheat provides a soft, bready foundation that balances the acidic bite. This vibrant fruit bomb showcases high intensity, where the hop-derived peach and apricot esters meet a crisp, refreshing finish, creating a complex and flowerful sensory experience.

Appearance. Straw to light gold. Slight haze from wheat and heavy dry hopping. Large, white, frothy head with moderate retention.

Aroma. High intensity lactic sourness, sharply lemony. Pronounced Amarillo hop character of grapefruit, orange, and florals. Low bready wheat malt. Clean fermentation with moderate peach esters.

Taste. Dominant clean lactic acidity. Strong hop flavors of orange and citrus pith from Amarillo hops. Supportive bready wheat malt. Low bitterness. Dry, crisp finish with lingering tartness and floral hop notes.

Mouthfeel. Medium-light body. High, effervescent carbonation. Noticeable alcohol warmth due to the elevated ABV. Crisp acidity, no astringency.
