This Oude Kriek is a masterful expression of the Fruit Lambic style, blending three-quarters aged lambic with one-quarter young, spontaneous fermentation. The inclusion of 400 grams per liter of authentic Schaerbeek cherries creates an intense sensory profile defined by deep, fermented fruit character and a vibrant ruby hue. On the palate, a sharp, natural acidity dominates, yet it is elegantly rounded by the fleshy fruitiness and subtle tannic structure of the cherries. Complex funk, reminiscent of hay and barnyard, weaves through the profile, while bottle refermentation provides a lively, sparkling effervescence that carries the bone-dry, tart finish into a long, refreshing aftertaste.
Appearance. Deep, brilliant ruby-red to purple with a thick, mousse-like, pink-tinted head that shows exceptional retention and lacing.
Aroma. High intensity of fermented tart cherries (Schaerbeek) dominates, layered over a complex wild yeast profile featuring barnyard funk, horse blanket, and hay. Subtle oak and a sharp acidic prickle are present, with virtually no malt or hop aroma.
Taste. Initial impression is sharply acidic and puckering, followed immediately by rich, fermented cherry flavors. The profile is bone-dry with no perceived residual sweetness, supported by a complex, funky lambic base. Hop bitterness is negligible, while the finish is exceptionally clean, tart, and lingering with fruit skin tannins.
Mouthfeel. Medium-light body with a distinct puckering tartness. High carbonation provides a sparkling, champagne-like mouthfeel. Very low alcohol warmth and a light tannic astringency from the cherry pits and skins.
