This Wild Specialty Beer showcases the vibrant, stone-fruit-forward character of yellow nectarines and yellow peaches integrated into a complex mixed-fermentation base. The Rare Barrel’s signature acidity provides a sharp, lemony brightness that underscores the juicy, floral aromatics of the fruit. Aging in oak barrels introduces subtle structure and faint vanillins, balancing the Brettanomyces-driven funk of damp hay and soft leather. At 8.1% ABV, a gentle warmth supports the palate, leading to a bone-dry, mouth-watering finish where the lingering essence of sun-ripened fruit skins and tannic wood notes intertwine elegantly without any residual sugar.
Appearance. Deep gold to soft amber (SRM 6-9) with a slight haze; a thin, white head forms briefly but dissipates quickly into a fine rim with minimal lacing.
Aroma. High intensity; dominant scents of ripe yellow nectarine and fuzzy peach skin are layered over a complex wild bouquet of pineapple esters, dusty barnyard funk, and a sharp lactic tang. Neutral oak and a hint of cracker-like malt provide a steady base.
Taste. A bracing initial tartness gives way to succulent peach and nectarine flavors that lean toward the acidic and floral. Fermentation character is prominent, featuring lemony acidity and earthy funk.
