This elegant Brett Beer opens with a vibrant sensory display, marrying the rustic complexity of wild fermentation with the expressive, tropical notes of the 2018 Pink Boots Society hop blend. Six months of quiet maturation in oak barrels imparts a delicate structural depth, weaving subtle vanillin and dry wood tannins into a highly attenuated, effervescent body. The open fermentation invites a nuanced, earthy funk reminiscent of fresh-cut hay and soft leather, perfectly balancing bright grapefruit and floral hop aromas. It finishes exceptionally dry, clean, and crisp, leaving a lingering impression of rustic orchard fruit and refined oak.
Appearance. Light golden to pale amber (5-7 SRM) with a slight, inviting haze. Pours with a fluffy, white head that shows moderate retention and leaves delicate lacing on the glass.
Aroma. High intensity; dominant tropical fruit esters of pineapple and peach alongside bright citrus and floral notes from the hop blend. A rustic, moderate Brett character presents as fresh hay, wet stone, and light leather, backed by a subtle, sweet toasted oak and vanilla woody note. No lactic sourness is present.
