Aged in oak, the beer integrates a mild Brettanomyces funk—reminiscent of hay and light leather—with the rustic, grainy character of a traditional Saison. On the palate, the mixed-fermentation profile delivers a refreshing tartness and a bone-dry finish, supported by a light wheat-driven body. The interplay between the tropical Mosaic influence and the earthy farmhouse yeast makes for a highly effervescent and nuanced table beer.

Appearance. Pale straw to light gold (3-4 SRM) with a slight, hazy opalescence. Pours with a rocky, long-lasting white head that leaves delicate Belgian lacing on the glass.
