Appearance. Straw to light gold in color (3 SRM) with a slight haze. Forms a dense, white head that dissipates quickly, typical of highly acidic beers, leaving light, fleeting lacing.
Aroma. High intensity of clean lactic acid, showcasing tart lemon and green apple. This is complemented by a delicate, floral, and sweet-hay herbal note from the Jade Needle white tea, with a backing of faint, dry, toasted oak wood. No hop aroma or funk is present.
Taste. An initial impression of sharp, clean, lemony lactic sourness dominates. A subtle crackery malt backbone supports the acid, while the mid-palate reveals elegant herbal, earthy, and soft melon flavors from the white tea. Finishes very dry and crisp with a lingering lactic tang and a touch of woody oak tannin. No hop flavor or bitterness.
Mouthfeel. Medium-light body with high, effervescent carbonation. Crisp, tongue-tingling acidity with a very light, drying astringency from the oak aging. A subtle, well-integrated alcohol warmth is present.
